Aromatically-layered, big mouth feel, complex. Oak is integrated and there is a nice acidity. The RARECAT Cabernet Sauvignon 2017 benefited from 80% new oak, 2 years in barrel, and 2 years of bottle age. This wine is approachable now but will continue to evolve nicely over the next 15 years. This wine benefits from decanting.
Vineyard Notes:
Our Cañon Creek Vineyard is located just below Howell Mountain AVA on the eastern hillsides. The vineyard combines clones 6 & 337. Cañon Creek represents 96% of this blend. Hall Vineyard is located on valley floor in St Helena, next door to the Lewellen vineyard. The small amount added to this wines adds a layer of bright fruit to the nose.
Tasting Notes
Wow. The mountain fruit dominates with dark fruit and deep, full body wine texture. The dark, deep color foreshadow the rich layers of plum, raspberry, red cherry, spice, cocoa, and licorice. Big, chewy tannins and big body. The finish lingers and a bright acidity makes this a great food wine.

We love this with big and bold, rich and deep flavors, red meat, or game. Short rib, roast, braised beef, prime rib, juicy burger, or daube.
