2016 was a later harvest than 2015 for Ilsley Vineyards by about 2 weeks. The wines reflect this greater "hang time" by lower acidity and even more density than the previous year. The 2016 Cabernet Sauvignon's color is a very dense crimson, clear but opaque due to the intensity of the color, which is not unusual for this beautifully grown hillside fruit. The aromas are dark bright cherries, ripe blueberry and blackberry on the nose with just a hint of mint. The wine is soft and rich on entry with a mouth-filling, dense palate, finishing with firm tannins to pair with everything from traditional steak and potatoes to bright fruit sauces on duck or pork. This wine will age a very long time and will benefit from being put away, out of site for 3-5 years if you can.
