Our 2019 RARECAT Pinot Noir from Russian River is extremely aromatic with notes of raspberry, red fruit, pumpkin spice, violet, and sassafras. Light cranberry color with a nice round texture that shows tannins are well integrated. The finish bursts with cranberry, red fruit and spice. This wine is young and will continue to beautifully evolve.
Winemaker Notes
Our 2019 RARECAT is a barrel selection from two vineyards in Russian River. Pommard is the dominant clone in our 2019 RARECAT Pinot Noir. One vineyard brought the other elevated the aromatics and delicated floral, spice, and red fruit notes, while the other vineyard added structure and depth that lengthened the mouth feel and finish. We are thrilled with the results of the final blend.
Over 4 days of cold soak, we did one pump-over per day. We inoculated the must day five and continued daily pump-overs and a punchdowns. Gentile extraction is the key to our RARECAT Pinot. The total maceration was 13 days. After being pressed, the wine was put into 30% new French oak barrels customized for RARECAT by one of the few Master Cooper in Burgundy. After an initial barrel selection, we moved the wine to 100% new Montgilard French oak barrels to add additional complexity and texture. The oak tannins integrated beautiful. A final barrel selection and blend was made before our bottling in July.

We know turkey isn't the only pairing for pinot noir. Our RARECAT Pinot Noir drinks beautiful when served with salmon, ham, chicken, pork chops, and Asian fusion dishes. Try a crusted ahi tuna, glazed BBQ salmon steak on a cedar plank or a pan seared chicken breast with figs and olives.
